Microgreens are the young seedlings of vegetables and herbs—tiny but packed with flavour and nutrients. Falling somewhere between a sprout and a baby green, they’re harvested just after the first leaves appear.
Because of their compact size, microgreens concentrate nutrients and taste. In fact, some varieties like cabbage and radish can contain up to 40 times more nutrients than their mature counterparts. While they’ve gained popularity on cooking shows, microgreens are more than a garnish—they’re one of nature’s hidden superfoods.

At Urban Green Sydney, we use coconut coir (coco) as our growing medium of choice. Coir is a renewable resource made from the husks of coconuts—an otherwise unused by-product of the coconut industry. Instead of being discarded, the husks are processed into a light, airy medium that’s perfect for growing plants.
Sometimes you may notice small white or gold flecks in the mix. These are perlite and vermiculite—natural additives that improve growth by helping with aeration and nutrient uptake.

Most microgreens sprout quickly—you’ll usually see the first shoots within 3 to 9 days, depending on the variety and growing temperature.

You don’t have to soak peas, but doing so will improve germination. Regular tap water works perfectly well. Here’s how:
Soak – Place peas in a small container and cover with about 2 cm of tap water.
Wait – Leave at room temperature overnight (no longer than 16 hours).
Rinse – Drain and rinse the peas well.
Plant – They’re now ready to sow in your grow medium.
P.S. Only peas need soaking—no need to soak the other seed varieties in your kit.
